Bacon Wrapped Clam Cups

Ingredients
- 6.5 ounces Roland® Chopped Clams
- 2 tablespoons Roland® Olive Oil
- 1 1/2 tablespoons (27g) Roland® Fire Roasted Red Peppers
- 1/4 cup (74g) Roland® Sautéed Onions
- 12 ounces bacon
- 1 1/2 teaspoons (6g) minced garlic
- 1 cup (50 g) Italian herb panko
- 1 tablespoon (13g) lemon juice
- 1 lemon zested
- 1 tablespoon (4g) chopped parsley
Directions
- Shape bacon into mini muffin tins and bake at 400 degrees F for 20 minutes
- Chop the clams into small pieces. In a sauté pan, sauté minced garlic in olive oil for a few minutes. Add sauteed onion and combine. Then add the panko and toast well
- Transfer to a bowl and add clam juice to bring the mixture together. Then add lemon zest and juice, diced roasted red pepper, and parsley. Add salt and pepper to taste
- Spoon into the bacon cups and top with microgreens
