Fig Jam and Walnut Chocolate Truffles

A sweet and nutty addition to our chocolate truffle series, these candies leverage flavors from Roland® Fig Jam, walnuts, and brandy.
Ingredients
- ¾ cup heavy cream
- ½ cup salted butter
- ½ cup Roland® Fig Jam (get the Fig Jam on Amazon)
- 1lb semi-sweet chocolate, between 50% and 60%
- 1 tablespoon brandy
- 1 cup toasted walnuts, chopped finely
- Melting chocolate, for dipping truffles
- Sea salt or pink Himalayan salt, to garnish
Directions
- Heat cream, butter, and fig jam in a small saucepan, constantly stirring until butter is melted and combined with jam, and just slightly bubbling
- Take the pan off the heat and add chopped chocolate, brandy and walnuts until all is blended
- Let refrigerate for 4-6 hours or overnight. Scoop about 32 small rounds and set on parchment paper and back in the fridge
- Dip truffles in melting chocolate and return to parchment and sprinkle with salt to garnish. Chill until chocolate is set
