Lemon Anchovy Pizza

Ingredients
- 1 tin Roland® Flat Fillets of Anchovies in Olive Oil
- 2 tablespoons Roland® Extra Virgin Olive Oil
- Roland® Nonpareille Capers
- 350 g pizza dough
- 2 garlic cloves, minced
- 4 oz low-moisture mozzarella cheese, grated
- 1 lemon, sliced
- fresh dill, to garnish

Directions
- Preheat the oven to 400 degrees F
- Bring the pizza dough to room temperature. On a heavily floured surface start stretching and shaping the dough. Start with dimpling the dough, followed by a series of stretches and turns to get the dough to a 12" circle
- In a bowl, combine the minced garlic and 2 tablespoons of extra virgin olive oil. Spread the garlic oil over the center of the pizza, leaving room for the crust
- Top with the grated mozzarella cheese followed by a generous amount of capers
- Place the pizza in the oven for 10-15 minutes until the dough is golden brown and the cheese is melty
- Top the pizza with anchovies, a few slices of lemons, and a pinch of fresh dill. Squeeze the lemon over the pizza and serve
- Leftover pizza can be stored in the refrigerator tightly wrapped in aluminum foil. When ready to eat again, reheat in the oven until warmed throughout
