Spicy Mini Pizzas

Spice up your pizza game with these spicy mini pizzas! Customize them to your liking or try our suggested fiery toppings.
For the Pizza Sauce
- 2 pounds Roland® Oven Roasted Tomatoes
- 1 tablespoon tomato paste
- 1 28oz can crushed tomatoes
- 1/2 tablespoon Roland® Anchovy Paste
- 4 cloves garlic
- 1 minced onion or 200 g Roland® Sautéed Onions
- 1 cup water
- 1 bunch basil
- 1 pinch of sugar
Pizza Toppings
- 14oz sheet ready-rolled light puff pastry
- Whole Calabrian Chili Peppers, sliced
- Roland® Pitted Kalamata Olives, sliced
- Italian Sweet Sausage
- 1 cup shredded mozzarella cheese
Directions
For the Pizza Sauce
- Sautee the onion and garlic until translucent, then add the anchovy paste and tomato paste. Sautee together for a few minutes
- Add the tomatoes, water, bail, and a pinch of sugar. Cook over medium heat for 20 minutes
- Using an immersion blender, blend until smooth. Adjust with salt to taste
For the Pizza Minis
- Preheat the oven to 400 degrees F. On a clean surface, unroll the puff pastry and cut it into 5' x 3' rectangles. Lay the puff pastry rectangles on a parchment-lined baking sheet
- Using a knife, score a 1cm border around the edge of each pastry square. Bake for 15 minutes, until puffed but not fully cooked
- Remove the semi-cooked pastry from the oven and use a spoon to gently pop the top of the pastry squares. Spoon on a bit of sauce, sprinkle with mozzarella, and arrange with Italian sausage, Kalamata olives, and Calabrian Chilis
- Bake for another 5-8 minutes. Finish with basil leaves and a drizzle of olive oil
