Sweet and Sour Cold Noodles

This refreshing dish combines Chinese noodles, chicken, and vegetables with a variety of savory and sweet flavors to create this elevated Asian recipe. Recipe by Renee LI @foodie_renee
for the noodles and toppings
3 servings Chinese noodles
½ English cucumber
½ carrot
1 cup shredded chicken
¼ cup roasted peanuts
for the sauce
2 Tbsp minced garlic
2 Tbsp chopped scallions
2 Tbsp chili powder
3 Tbsp white sesame
1/3 cup vegetable oil
¼ cup Roland® Black Vinegar (available on Amazon)
¼ cup soy sauce
2 Tbsp Roland® Oyster Sauce (optional, but highly recommend) (available on Amazon)
2 Tbsp sugar
Salt to taste
Directions
Prepare the shredded carrot, cucumber and chicken, set aside
Cook noodles according to the package
When the noodles are done cooking, soak it with iced water. Take them out and drizzle with sesame oil and toss well (sesame oil is optional, but recommended. It will keep the noodles from sticking together)
Add the dry ingredients from sauce into a bowl, pour over hot vegetable oil, mix well
Add the rest of the ingredients, mix well. Taste, add salt if necessary
Assemble the noodle with prepared toppings, drizzle over the sauce
